Ingredients

Crust

  • 1 1/2 Cups Gluten free Pretzels
  • 2 Tbsp Granulated Sugar
  • 3 Tbsp Melted Butter

Cheesecake

  • 1 Cup Heavy Whipping Cream
  • 8 Ounces Cream Cheese
  • 1/2 Cup Confectioners Sugar
  • 2 Tsp Vanilla Extract

Peach Nectarine Purée

  • 2 Peach
  • 2 Nectarine
  • 1 Tbsp Sugar

Instructions

Crust

  • In a food processor pulse the pretzels, sugar and melted butter. Blend until combined and in little pieces.
  • Pour 1/4 of mixture into each ramekin. Smash down into ramekins until it's smooth.

Cheesecake

  • In a mixing bowl beat heavy whipping cream until stiff peaks form.
  • In a new mixing bowl beat cream cheese, confectioners sugar, and vanilla until smooth.
  • Fold in whipping cream into cream cheese mixture. Once combined spoon into ramekins evenly. Smooth out and put in refrigerator until cold about 3 hours.

  • Peel peach and nectarines.
  • In a clean food processor blend fruit with sugar until blended into a purée.

  • Assemble the cheesecakes. Put purée in each chilled ramekin and serve.
