Vegan + Gluten-Free Fudge Brownies

  • 2 eggs, room temperature
  • 3/4 cup coconut sugar
  • 1/2 cup almond butter
  • 1/3 cup melted vegan butter
  • 2 tsp vanilla
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1/4 tsp sea salt
  • 1/2 cup mini chips
  • Chocolate for drizzling (melted with 1 tsp vegan butter)
  1. Preheat oven to 350F and prepare an 8×8 baking dish with oil.
  2. In a large bowl, beat together eggs, coconut sugar, almond butter, vegan butter, and vanilla.
  3. In a separate small bowl, stir together almond flour, cocoa powder, and salt.
  4. Add dry ingredients to wet, stirring until fully combined.
  5. Add chocolate chips if desired, saving some to sprinkle on top as well.
  6. Pour batter into prepared dish, sprinkle with more chocolate chips, and bake for 14-16 minutes or until toothpick comes out clean.
  7. Let cool completely before serving and store on counter or in fridge.
